Mother’s Day – Devon Baking Class

In the UK we are blessed with a rich tapestry of regional baking traditions. In this class we will be diving into some traditional bakes from Devonshire, including:

Devon Saffron Cake – A delicate sweetbread, made with clotted cream and coloured a beautiful deep yellow with saffron. Learn how to make and work with a dough enriched with eggs, cream, and sugar. I draw on my years of bread making experience to teach you all the tricks and tips for working with this tricky dough.

Apple Dappy – This might be unfamiliar to many bakers, even in Devon. A sticky, lemon and apple pudding resembling Chelsea Buns. Apple Dappy is a wonderful old Devonshire recipe, sent to me while I was writing The Crediton Cookbook. It’s a true celebration of the wonderful apples we grow here in Devon.

Oat, Spelt and Date Scones – I couldn’t teach a class on Devon baking without including scones! The cream tea is a West Country icon. I wanted to teach a twist on the classic, so in this class we are making our scones with oats and spelt flour to add a complex nutty flavour, sweetened by sticky dates. We’ll be enjoying these with some of my homemade clotted cream and jam.

This class is inspired by the work Alison Orchard and I have been doing on The Crediton Cookbook. Researching and collecting local recipes has been a wonderful way to connect with local history and the community. Now I want to share that knowledge and passion for Devonshire baking with you.

All my cooking classes at Living Slow are aimed at helping you find your flow in the kitchen, use cooking and baking to unwind, and to have fun. Learn new skills and build confidence in your abilities. Class sizes are limited to four people for a more relaxed and informal classroom setting.

Suitable for vegetarians, however we will be using dairy and gluten products in this class. If you have any allergies I should be aware of, please contact me before the class.
