October’s cooking class will start with tea, coffee and an introduction to domestic cooking. We will be learning about different knives and how to use them, the best cooking equipment and how to make your home kitchen enjoyable, and efficient to work in. We will look at how to stock a pantry with whole foods, how we can increase the diversity of the food we eat, and try some ingredients I couldn’t live without.
After lunch, if the weather is kind, we will go on a short foraging walk, to collect sloes to make sloe gin.
Finally, nothing beats fresh pasta and this month we will be making my favourite ravioli – squash and sage! We will be learning how to make a basic pasta dough, how to use a pasta machine, but also how you can make pasta at home without any equipment. Using ingredients from the veg garden, we will be making an incredible squash and ricotta filling for our ravioli, with fried sage leaves. Plus, we will be learning how to make ricotta from scratch for the filling.
After a hard day cooking, we will sit down together with a drink, to toast our successes and to enjoy our ravioli!
This class is equally suited to beginners or experienced foodies. Whether you love spending time in the kitchen or find cooking a chore, I promise you will come away from this class inspired.
This class includes morning and afternoon tea, coffee and cake, as well as lunch, dinner and some goodies to take home.
Teaching starts at 11am, so arrive a little early to get settled. We aim to eat dinner around 6pm and should be finished around 7pm, but please be aware it might run over a little.
